Saffron and Dill Rice



This rice dish is the perfect accompaniment for a variety of grilled meats such as grilled lamb or fish (take a look at my Oven Baked Garlic and Lemon Salmon recipe), it is also really tasty alongside roasted butternut squash for a really delicious vegetarian meal. 

Ingredients: 

·     2 cups of basmati rice
·     ¼ cup ghee, you can use normal slightly salted butter if you don’t have this
·     ½ cup dill
·     1/8 cup dried mint
·     1 tsp saffron
·     1 tbsp milk

Method: 

1)   Add the rice to a pan with just enough water to cover it and some salt 
2)   When there is only a little bit of water left add the ghee and herbs, and simmer until all the water has evaporated
3)   Once cooked remove 3 tbsps of rice into a separate bowl and mix it with the milk and saffron until the pigment of the saffron coats the rice and it becomes orange

4)   Add the saffron rice to the main rice dish and combine. Enjoy!

Blueberry Meringue Cake

Hello everyone, Today's recipe is a beautiful blueberry meringue cake. This cake is one that can be passed off as a dessert and a tea time snack and though it looks complicated it actually takes no time at all! For this recipe you will need:   1 punnet of blueberries 2 eggs 250g sugar  125g butter  75g self raising flour 100 ml milk 1 tsp vanilla extract 1 tsp baking powder  1 tub of double cream Method:  (Preheat oven to gas mark 4) Begin by separating your sugar into two 125g portions. Ratatouille

Ratatouille is a hearty vegetable stew packed full of flavour.
