Karahi Gosht (Indian Meat Curry)

My name is Maliha, and I'm what you would call a typical foodie. Not only do I love going out to eat but I love cooking food myself belonging to a variety of cuisines. I enjoy taking traditional recipes and breaking them down to make them easy, simple, and most importantly- quick!

The first recipe I'd like to share is my absolute favourite Indian take-away curry made easy- a Karahi Gosht. A Karahi Gosht is a very rich meat curry, packed with a deep depth of flavour which one can only imagine takes ages and ages. However, I've managed to condense the recipe down whilst packing just as much punch!



To start off, chop one onion into slices, place it in a pan with a glug of oil, and some ginger and garlic puree. 


Once the onions are slightly transparent, add the meat; I used pre-boiled and frozen mutton. 


As my meat was frozen in its own stock, I did not need to add any water. However, if your meat is raw then add one cup of water at this point. 


Garam masala is an aromatic spice mixture comprising of toasted cinnamon sticks, cardamom pods, black peppercorns, cloves and cumin seeds. Along with the ground pepper, this combination is what packs the curry full of its flavour. Once you've added these spices, allow the mixture to simmer for 5 minutes so that the spices can cook out. 


Next, add one can of chopped tomatoes. 


Once you have added the chopped tomatoes, cover your curry and allow it to reduce. 


This should take 10-15 minutes, a perfect amount of time for a cup of tea. 


Once the curry has reduced (the oil should have risen to the top), an optional step would be to add one fresh chopped green chilli. At this point you must also add two tablespoons of yogurt. 


Allow the curry to simmer for an additional 5-10 minutes, and ensure that the yogurt has been stirred through evenly. 


Once you're curry is ready, garnish with fresh coriander and fresh ginger cut into short thin stalks. The curry is best served with naan bread, or basmati rice. Enjoy!

Saffron and Dill Rice

Udon Noodle Soup

As a lover of Japanese food, I am always eager to learn how to prepare traditional recipes at home. What I love about this Udon Noodle Soup is just how adaptable it is. The chicken broth can be replaced with vegetable or beef broth and cod can be replaced with prawns, chicken, meat or tofu!
